Senior Sous Chef - Liverpool, England

Responsible for the day to day running of the department, rotas, training and development, cost control and budgeting. Support the Executive Chef to reach all targets set by the balance score card.

Experience:

· Previous experience in a high quality establishment in a similar or more advanced role.

Skills and Knowledge

Education or Certification

· Good level of English essential

Job Summary

The following are specific responsibilities and contributions critical to the successful performance of the position:

Ensure that the outlets are effectively managed and all guests receive a consistently high standard

Communicate to all staff, Head Chef and Management to ensure that all requirements are understood and delivered

Co-ordinate and monitor all training within the kitchen

Menu planning with use of seasonal produce when available

Ensure that all menu specifications are adhered to in order to control all costs and maintain GPs

When preparing kitchen rotas be aware and monitor payroll costs

To have an understanding of the admin side of the kitchen Eg – payroll control/flex, food cost, budget control, menu/dish costing

OTHER

Performs other related tasks as assigned by management.

Complies with Marriott International Hotels Limited Regional Office policies and procedures.

Working hours as required to do your job but normally not less than 40 hours per week.

The Ideal Line Chef

As a skilful and talented chef, with an eye for presentation and a perfectionist for class you’ll know all there is to know about food preparation and portion control. Working within a busy kitchen supporting the Head Chef you must ensure that all equipment is maintained, cleaned and working correctly at all times. You’ll be responsible for reporting on any malfunctions or hazards and complete Risk Assessment as instructed by the Management team. To have a sound knowledge of food safety and hygiene is also crucial to be successful in this role.
