Midsummer House is a Victorian villa built beside the banks of the River Cam and on Midsummer Common in the historic University City of Cambridge. Midsummer House prides itself on staff development with some brilliant chefs passing through the kitchen during the years and progressing to gain their own Michelin stars including Mark Poynton, Tim Allen, Lawrence Yates and Matt Gillan. Today the restaurant is run by Daniel Clifford, Michelin Star Chef.

Being a Kitchen Porter for Midsummer House means: Assisting chefs and management in the general running of the kitchen and back of house areas, by maintaining a high standard of cleanliness and order.

Duties and tasks include: cleaning, health and safety, communication, manual handling and general/ other duties.

The Position

As an experienced Chef de Partie you will be responsible for the efficient and effective running of a designated section of the kitchen, this includes; the preparation, production and presentation of all menu and related items, the organisation and supervision of staff under your control, and work as a team member in preparing cold and hot lunches/dinners.

• Ensure delegated tasks are carried out to the required standard using, where relevant standard methods and recipes.

• Plan work to ensure adequate time is allocated for correct preparation and presentation.

• Conduct regular checks to ensure agreed standards are met with regard to quality control, handling, storage and the use of commodities.

• Write daily order lists with the Sous Chef for fresh produce and dry store items.

• Maintain a precise and accurate record of the preparation, cooking and presentation of all dishes produced on the section.

The Person

The successful candidate will have;

• AA rosette background and have a flair for delivering outstanding dishes

• Previous venue catering experience preparing cold and hot lunches/dinners.

• Excellent leadership and communication skills are key

• Flexible approach to work with good attention to detail

• Proven experience as a Chef de Partie

• Proven Hygiene Certification (Level 2 or above)
